blueberry and almond muffins

Since I came back from holiday last week, I've felt slightly overwhelmed.


Not by any one thing in particular. It's just that, all of a sudden, everything in my life seems so complicated. 

I look round the flat and all I see is a list of jobs that need to be done. It's never quiet - I can always here a television or the radio playing somewhere. There are just people. Everywhere.

Everything is just such a jumble of mess and sounds and confusion at the moment. My mind is racing at a million miles an hour trying to work out what I should be doing next. 


It is partly, I suppose, a post-holiday come down but it's also the fact that I have to share my living space with somebody again. My boyfriend couldn't come on holiday with me and whilst I missed him, it was startling how quickly I settled back into the routine of having my own space. I didn't have to share the sofa (or bed) with anyone. The mess and the noise created were all my own. I could do, pretty much, exactly what I wanted, whenever I wanted and come and go as I pleased.


The first few days definitely made for a difficult period of adjustment.

Another thing that I really miss is the simplicity of how we eat in France. Lunch can just be a plate of tomatoes from the market and a baguette, fresh that morning. In the evening, a bowl of risotto or a roast leg of lamb that will last us for several days.


We've never eaten anything particularly complicated at home but this weekend, I was really drawn to some of the simplest recipes in my arsenal. These muffins are rich in blueberries with a perfect texture from the yoghurt and addition of ground almonds. I used olive oil where the original recipe called for butter for the simple reason that we had run out of butter but the recipe works equally well. A little sprinkling of sugar before you bake the muffins is like magic dust, creating a golden and crunchy topping. I didn't get much of a rise out of these as my baking powder was on its very last legs but even so, they refuse to feel heavy.

Blueberry and almond muffins
Adapted from BBC Good Food
Yield: 12 muffins

Ingredients
  • 150g (2/3 cup) unrefined caster/granulated sugar
  • 1 teaspoon vanilla bean paste
  • 1 medium egg
  • 175ml (2/3 cup + 1 tablespoon) plain greek yoghurt
  • 95ml (1/3 cup + 1 tablespoon) extra virgin olive oil
  • 200g (2 cups less 1 tablespoon) whole wheat flour
  • 1 teaspoon baking powder
  • 100g (1 cup) ground almonds/almond meal
  • 200g (about 1 + 1/2 cups) blueberries
  • 1 tablespoon demerara/turbinado sugar for sprinkling

Cooking Directions
  1. Heat the oven to 180C/350F (fan 160C/325F) and line a muffin tin with paper cases.
  2. With a wooden spoon, mix together the sugar, vanilla, egg, yoghurt and oil in a large bowl or jug.
  3. In another bowl, whisk together the flour, baking powder and ground almonds.
  4. Add the wet ingredients to the dry ingredients and lightly fold together. Finally add the blueberries and fold them through. Don't worry if the batter is lumpy or not quite mixed together, better than than over-beaten and flat muffins.
  5. Divide the muffin batter between the paper cases and sprinkle the tops with a little demerara/turbinado sugar. Bake for 20-25 minutes until risen and golden brown.
  6. Transfer to a wire rack to cool. Store loosely covered with a a tea towel rather than in an air-tight container.

I feel the same way after returning from vacation. I love my honey, but I sure do love some alone time. It takes me a while to adjust, too.
Also, I've grown tired of all the 'noise' too. We started enjoying the silence more :)

I remember what I took away from eating in Italy (especially Tuscany) was how simple their dishes were as well. A pasta dish with fresh veggies and a little olive oil was really all you needed to be happy.

Those muffins look like a great way to ease back into things:-)

Kathryn, these muffins are beautiful.

With Ben gone, I have developed my own routine and system for life and it will be a very odd and I'm sure very challenging readjustment when he comes back home after we are married. o.O I love my noises, my sounds, my choice of TV show playing in the background and most of all, my silence.

France sounds like it was a great time and something you needed to recharge and realign yourself. :)

Lovely sounding muffins. I think there is a typo within the directions - should be oil rather than butter? I guess you swapped out 100 g butter for 100 g oil?

Awe, petal...post holiday blues sure do suck :( but these blueberry muffins should definitely brighten your spirit! Aren't you off to Cali soon? Gorgeous muffins - blueberry is my favorite! I especially love the sugar topping, as I always sprinkle a little vanilla bean cane sugar on top of mine - it's the perfect touch.

PS - I loved eating in France. Chocolate! Baguettes! Fresh produce! It was pure heaven.

I'm making these on Monday to bring to a friend. They sound amazing! And I like how they look. Not huge and fluffy but... homey. Can muffins be homey looking? Because I think these are. I'll definitely let you know how they turn out!

Wah! I forgot to add in the cinnamon that I wanted to add until it was all mixed together. And of course, I had to go and mess them up by adding the cinnamon anyway and overmixing them. Hmp. Next time I will follow directions! They came out very pretty, though. :)
