mustard baked fries & june foodie pen pals

It's time for another UK & Europe edition of foodie pen pals!

This month I got to send a parcel to Caroline who blogs over at What's Happening At My House, a great blog with a bit of everything! Caroline is a cook rather than a baker so I got to put together a fun box of savoury treats for her.

A lovely lady called Hilary sent me a parcel this month and it was so thoughtfully put together including some homemade honey, cinnamon and almond granola (perfect for breakfast), some wonderful Cheshire cheese with Rioja and caramelised onion, some spiced sea-salt to add to my rapidly growing-out-of-control collection  and a restaurant journal to keep track of my favourite places to eat.

Hilary also slipped in a jar of 'proper' (her words, not mine!) French mustard with tarragon. I like to make a little something with one of the ingredients in my parcel and it was this mustard that I alighted upon.

You see, first Kathryne made these baked fries. They went on my list to try. Then Gina made them. And then they zoomed straight to the top.

As soon as I saw the mustard, I knew it was destined to coat some fluffy on inside, crunchy outside fries and I wasn't at all disappointed with the results.

Both Kathryne and Gina have blogged the method to make these perfect fries so I don't really feel the need to reinvent the wheel. Before baking, I coated my potatoes in a heaped tablespoon of mustard and the zest of half a lemon. The mustard added a great kick of flavour without being too overpowering and the lemon brought a freshness that made it seemed entirely appropriate to eat these fries alongside a cold glass of white wine.

For various reasons (mostly holiday related), I'm not going to be able to take part in the next couple of months of foodie pen pals but the number of participants is getting bigger and bigger every month. If you're based in the UK or Europe and want to get involved, head over to Carol Anne's blog to check out the details.

These fries are now at the top of my list as well. Ugh, fries are just friggin' good. And with a pre-baked coating of mustard and lemon zest?? Yes please!

Jason is a fry fanatic so you know I'm going to have to try this genius precoating method!

This looks like a fantastic parcel! and anything that leads to more chips is a massive win in my book!

@Tartlet Sweets - I'm pretty sure I would eat fries at every meal if I thought I could get away with it ;

@Chung-Ah - So good! And check out Gina's recipe if you haven't, she has this awesome rosemary coating too!

@Jenny - Haha, so true!

@Amy - This was the perfect amount of mustard for me, just enough of a kick but you can still get all that french fry goodness!

Yay! Now I know precisely what to make with the 3/4 of bag of potatoes in the fridge:) And just seeing a bag of homemade granola is causing serious contemplation of a granola-making project this weekend...

I love that you made something to go along with your post! The mustard french fries sound so delicious! A good use of mustard, to be sure.

Nice package! That granola sounds great. And this reminds me that I wanted to make French fries.

Here's a random weird fact about me. I have a mustard phobia. I can't even have it in the fridge for the husband. I shudder at the thought of mustard and this is the first mustard related post I have ever clicked on. :D

@Renee - Ha, I went into the kitchen to make granola this morning before realising that I had none of the ingredients at all...

@Rachel - Thanks lovely!

@Julie - I love how quick they are & they taste so much better than those freezer oven fries.

@Joanne - Defo, I'm not always that big a fan of mustard but it works so nicely here.

@Erin - I am honoured that you actually read it! I have similar food phobias so I can understand what an effort it must have been to read this. I imagine these fries are really great in the non-mustard variety though, Gina and Kathryne's look great!

I bet these chips are great. A thing that I have discovered since being over here is that mustard is much better on chips than either ketchup or mayonnaise.

What a great parcel, that cheese looks wonderful. I got some much missed cheese in my box too, it was great!

Love this!! What do think about using dijon mustard, would that work with this recipe, you think?

Mmmn love the idea of mustard baked fries! And the foodie pen pals thing is so much fun - definitely need to try to get involved in one soon :-)

My husband and I have an ongoing 'debate' about baked versus fried fries and he maintains that I could never serve up a batch that will take him away from his beloved fryer. I think this is the recipe that may just do that!

I love the idea of foodie pen pals, I shall have to investigate!

Baked Chips are SOO good, never have tried with mustard though so thanks for sharing!

@Kristy - Thanks for letting me know, I'll keep an eye out for it!

@ally - You're too sweet, thank you so much!

@ediblethings - Oh I don't know, I did still dip these in mayo ;)

@Julie - I don't really know that much about mustard but I'm sure it would be absolutely fine!

@thelittleloaf - It's so much fun to see what people put together for you, so far it's all been things that are new to me and it's great for making me think creatively!

@fishfingersfortea - I'm a little bit scared of things that involve a lot of hot oil so these win out for me every time but that sounds like the real test for them!

@Amelia - Thank you, so glad you like them!

@the actor's diet - They're so tasty and I love how you can customise the recipe to whatever you want (and therefore can eat fries with everything!)
